Sử dụng thiết kế nghiên cứu cắt ngang mô tả nhằm xác định tỷ lệ kiến thức, thái độ, thực hành đúng về an toàn thực phẩm của người quản lý và nhân viên chế biến thực phẩm tại các bếp ăn tập thể khu công nghiệp trên địa bàn tỉnh Hưng Yên năm 2014. 78,8% người quản lý và 80,9% người chế biến biết về bệnh truyền qua thực phẩm; có 70% người quản lý biết tất cả các ảnh hưởng của thực phẩm không an toàn tới sức khỏe, trong đó tỷ lệ ở nam quản lý là 78,4% và tỷ lệ ở nữ quản lý là 62,8%. Tỷ lệ người chế biến biết khu vệ sinh phải ngoài khu vực chế biến là 78,8 %; biết 6 bệnh truyền qua thực phẩm do Bộ Y tế quy định là 82,1%; biết nước chế biến bị ô nhiễm có thể gây ô nhiễm thực phẩm là 95,1%; có 69,7% người chế biến biết hơi thở người chế biến cũng có thể là yếu tố gây ô nhiễm thực phẩm. Có 65,3% người chế biến cho rằng thực phẩm sau khi nấu chín có thể để được ở nhiệt độ phòng không quá 2 giờ. Tỷ lệ người chế biến được tập huấn thực hiện các quy định về đảm bảo an toàn thực phẩm cao hơn tỷ lệ người không được tập huấn, sự khác biệt giữa hai đối tượng này có ý nghĩa thống kê với p<0,05.

Summary:
A descriptive, cross-sectional study was conducted to define the proportion of right knowledge, attitude, practice on food safety of managers and working staffs contacting directly with food handling at collective kitchens in the industrial zone in Hung Yen province in 2014. 78.8% of the managers and 80.9% of food handlers knew about food-borne diseases. There were 70% the managers known all the effects of unsafe food on health, in which, the proportion of males were 78.4% and females were 62.8%. The percentage of foods handlers knew that toilets had to separate from food processing area was 78.8%, those who knew 6 food-borne diseases specified by the Ministry of Health took 82.1%; those who knew contaminated cooking water may contaminate food took 95.1 %; and 69.7 % said the breath of food handlers can also be the factors that caused food contamination. There was 65.3 % of the food handlers said that all food after cooking can be left at room temperature no more than 2 hours. The proportion of having right practices on food safety regulations among those who had trained was significantly higher than those who had not, with p < 0.05.
