Khảo sát lượng tồn dư của 6 chất bảo quản dùng trong bảo quản một số loại quả tươi và quả khô ở Việt Nam

Mục tiêu: Khảo sát lượng tồn dư 6 chất bảo quản có thể gặp trong các loại quả tươi và khô là acid benzoic, acid sorbic và 4 paraben: methyl paraben, ethyl paraben, propyl paraben, butyl paraben.

Phương pháp: Sắc ký lỏng hiệu năng cao (HPLC) với detector DAD được xây dựng và thẩm định để phân tích các chất 6 chất bảo quản

Kết quả: Không tìm thấy các paraben tồn dư trong các mẫu thử cả tươi và khô. Không tìm thấy acid sorbic và acid benzoic trong các mẫu quả tươi. Có một số mẫu quả khô có acid sorbic nhưng đều ở hàm lượng thấp. 57% số mẫu khô có chứa acid benzoic, hầu hết có hàm lượng thấp (dưới 100 mg/kg). Chỉ có 2 mẫu có hàm lượng acid benzoic khoảng 500 mg/kg và 1 mẫu có lượng chất này là 1095 mg/kg, lớn hơn ngưỡng cho phép của Bộ Y tế và CODEX đối với quả khô (800 mg/kg).

Kết luận: Không phát hiện nguy cơ có 6 chất bảo quản trên trong hoa quả tươi. Trong một số mẫu hoa quả khô có phát hiện thấy acid benzoic và acid sorbic, trong đó acid benzoic có lượng tương đối lớn, có thể vượt ngưỡng cho phép của Bộ Y tế. Vì vậy nhà sản xuất hoa quả khô cần chú ý khi dùng acid benzoic làm chất bảo quản không được vượt quá 700 mg/kg với hoa quả nhóm mận, mơ, đào, không quá 800 mg/kg với các hoa quả khác. Kết quả trên cũng cảnh báo cơ quan quản lý cần có sự kiểm soát chặt chẽ hơn đối với loại thực phẩm này.

Abstract

Aims: To investigate the residual amount of 6 preservatives that can be found in fresh and dried fruits, which are benzoic acid, sorbic acid and 4 parabens: methyl paraben, ethyl paraben, propyl paraben, butyl paraben.

Methods: High Performance Liquid Chromatography (HPLC) with DAD detector.

Results: No residual parabens were found in both fresh and dried samples. Sorbic acid and benzoic acid were not found in fresh fruit samples. Some dried fruit samples contained sorbic acid but all at low levels. 57% of the dried samples contained benzoic acid, most of which were low (under 100 mg/kg). Only 2 samples had benzoic acid content of about 500 mg/kg and 1 sample had this amount of 1095 mg/kg, higher than the allowable threshold of the Ministry of Health and CODEX for dried fruit (800 mg/kg).

Conclusion: The risk of above 6 preservatives presented in fresh fruit wasn’t detected. Benzoic acid and sorbic acid were detected in some dried fruit samples, of which benzoic acid had a relatively large amount, possibly exceeding the limit of the Ministry of Health. Therefore, dried fruit manufacturers need to pay attention when using benzoic acid as a preservative, not exceeding 700 mg/kg for plum, apricot, peach fruits, not exceeding 800 mg/kg for other fruits.
