Trong điều kiện hiện nay, chất lượng cuộc sống ngày được cải thiện, mọi người quan tâm nhiều đến vấn đề an toàn thực phẩm. Tuy nhiên, đa số các doanh nghiệp chế biến thực phẩm quy mô vừa và nhỏ là nguồn cung chủ yếu về thực phẩm cho thị trường nhưng chưa chấp hành tốt các quy định của nhà nước về an toàn thực phẩm. Nghiên cứu được tiến hành năm 2013, tại 596 cơ sở kinh doanh dịch vụ ăn uống trên địa bàn Thành phố Hà Nội (tại quận Hai Bà Trưng, Hà Đông và huyện Gia Lâm), sử dụng bộ bảng kiểm quan sát. Kết quả cho thấy việc chấp hành quy định của pháp luật về vệ sinh thực phẩm của các cơ sở kinh doanh dịch vụ ăn uống trên địa bàn 3 quận/huyện tương đối tốt. Các chỉ số về điều kiện bảo quản thực phẩm, bảo quản nguyên liệu thực phẩm và sử dụng phụ gia đều đạt trên 80%. 100% các mẫu thực phẩm âm tính với S.aureus, Salmonella, Shigella. 100% cơ sở không sử dụng hàn the trong chế biến thực phẩm. 99,75% mẫu dấm đạt tiêu chuẩn, không chứa axit vô cơ. 99,29% cơ sở sử dụng nước sôi đạt. Trên 98% cơ sở đạt yêu cầu về rau, củ, quả, thịt và sử dụng phụ gia thực phẩm theo đúng quy định của pháp luật. Tuy nhiên chỉ có 65,1% cơ sở lưu mẫu thực phẩm còn 8,6% cơ sở phát hiện tồn dư tinh bột trong bát đã rửa sạch và 2,6% mẫu thực phẩm dương tính với E.coli.

In the context of increasing the quality of life, more people are interested in the issues of food safety. However, the majority of food processing enterprises which are small and medium in terms of size, considering as main source of food and beverages to the Vietnam market not follow the instruction of the control of food safety and product quality. This study was conducted at 596 facilities of catering services in Hanoi city (namely Hai Ba Trung, Ha Dong, and Gia Lam district) through an observation checklist. The findings of the situation of food sanitation situation reveal that: the implementation of the provisions of the law on food hygiene among catering services in three districts was relatively good. Indicators for food storage conditions; and storage of materials as well as additive food achieved at over 80%. 100% of the food samples were negative for S. aureus, Salmonella, and Shigella. 100% did not use borax in food processing. 99.75% vinegar sample qualified without inorganic acids. 99.29% of facilities achieved at using boiling water. Over 98% qualified in terms of vegetables, fruit, meat and additives food in accordance with the national law. Notably, only 65.1% establishments stored food samples. 8.6% contained residual starch among washed bowls and 2.6% of food samples tested positive for E. coli.
