Nghiên cứu nhằm tìm điều kiện tối ưu để sản xuất bột cà chua bằng kế hoạch bậc hai tâm xoay và phương pháp tối ưu hóa đa mục tiêu – sử dụng phương pháp hàm mong đợi. 20 thí nghiệm thực nghiệm được tiến hành để xây dựng hàm mục tiêu mô tả sự ảnh hưởng của tỷ lệ bổ sung maltodextrin vào dịch trước sấy phun, nhiệt độ không khí sấy, tốc độ bơm nhập liệu tới quá trình sấy phun. Bằng phương pháp hàm mong đợi đã giải bài toán tối ưu hóa đa mục tiêu xác định được chế độ tối ưu cho quá trình sấy phun dịch cà chua như sau: tỷ lệ maltodextrin/chất khô dịch quả 52%, nhiệt độ không khí sấy 1330C, tốc độ bơm nhập liệu 27 ml/phút. Khi đó hiệu suất đạt 74,2% và hàm lượng lycopen của sản phẩm là 43.334 mcg%.

The study aimed to find the optimal conditions for the production of tomato paste with 2-level rotatable design and multi-objective optimization - using the desirability function approach. 20 laboratory experiments were conducted to build the objective function to describe the influence of maltodextrin on the rate of additional services before the sun spray, drying air temperature, pump speed input to the spray drying process. By means of function was expected to solve multi-objective optimization to determine the optimal mode for spray drying tomatoes translated as follows: the ratio of maltodextrin/ juice 52% dry matter, drying air temperature 133 0C, the rate of input pump 27 ml/min. When the performance reached 74.2% and lycopene content of the product is 43.334 mcg%.
