Tóm tắt

Cà chua bi (Solanum Lycopersicum) thuộc họ Cà Solanace. Trong tiếng Anh gọi là Cherry tomato. Giống cà chua bi thuộc loại cây nhỏ, lùn, cho rất nhiều quả và được trồng quanh năm ở khắp mọi nơi trên cả nước, trong đó chủ yếu là ở Đà Lạt. Cà chua bi rất được ưa chuộng, ít sâu bệnh, có sức sinh trưởng mạnh mẽ. Quả cà chua bi nhỏ với khối lượng từ 10 đến 30g, thường là màu đỏ, nhưng cũng có thể có các màu khác như vàng, xanh và cả đen. Cà chua bi ăn sống rất giòn, có vị ngọt lẫn vị chua, nhưng ít chua hơn cà chua thông thường. Quả cà chua bi là nguồn dồi dào các chất dinh dưỡng và các hợp chất có hoạt tính sinh học. Tuy nhiên, bản chất và nồng độ các chất được tổng hợp ra chịu ảnh hưởng của rất nhiều yếu tố, đặc biệt là giống loài và độ chín. Do đó, cần phải hiểu rõ những nhân tố tác động này để thu được nguồn nguyên liệu tối ưu.

Abstract

Cherry tomato (Solanum Lycopersicum) belongs to Solanaceae family. The plants are small and dwarf. They can produce many fruits and are grown all year round all over the country; mainly in Da Lat. Cherry tomatoes are very preferred, having less pest and strong growth. Their fruits are small with a weight of 10 to 30g, usually in red color, but may also have other colors such as yellow, blue and even black. In fresh form, they are crispy, sweet and sour, but less sour than ordinary tomatoes.

Cherry tomatoes are a good source of nutrients and bioactive compounds. However, the nature and concentration of synthesized compounds are influenced by many factors, especially varieties and ripeness. Therefore, it is important to understand these factors in order to obtain the optimal material source.
