Polyphenol có mặt trong một số thực vật có khả năng chống oxy hóa và khả năng hỗ trợ giảm đường huyết trong bệnh đái tháo đường. Nghiên cứu tiến hành nhằm xác định hàm lượng polyphenol, khả năng triệt tiêu gốc tự do và khả năng ức chế men alpha-glucosidase của bột chiết tách từ lá vối, lá ổi, lá sen và hỗn hợp VOS. Kết quả cho thấy, hàm lượng polyphenol toàn phần của bột chiết tách từ lá vối, lá ổi, lá sen lần lượt là 263, 1mg/g; 339,5mg/g; 288,4mg/g. Khả năng triệt tiêu gốc tự do (tại nồng độ 0,12mg/ml) và khả năng ức chế men alpha-glucosidase (tại nồng độ là 0,4mg/ml) của bột chiết lá vối, lá ổi, lá sen với tỷ lệ trộn tối ưu là 1:3:1 có hàm lượng polyphenol đạt 319,6 mg catechin/ g bột khô; khả năng ức chế tự do đạt 72,3% (tại 0,12mg/ml); khả năng ức chế men alpha-glucosidase là 70,5% (tại 0,4mg/ml). Các kết quả của nghiên cứu đã chỉ cho thấy hỗn hợp VOS được xem là bán sản phẩm đầy tiềm năng của thực phẩm chức năng nhằm hỗ trợ phòng và điều trị bệnh đái tháo đường.

Plant polyphenols have antioxidant capacity and alpha-glucosidase inhibition supporting the prevention and treatment of diabetes. This study was conducted to determine the content of total polyphenols, free radical scavenging and alpha-glucosidase inhibition of the extracted leaves (Voi leaves (V), Oi leaves (O), Sen leaves (S) and the VOS mixture. The results showed that total polyphenol content of Voi, Oi, Sen was 263.1mg/g; 339,5mg/g; 288.4mg/g, respectively. The free radical scavenging (at final concentrations of 0.12 mg/ml) and the inhibition of alpha-glucosidase (at final concentrations of 0.04mg/ml)  of Voi, Oi, Sen was 63.6% and 67.6%, 69.8% and 68.7%, 65.6% and 65.4%, respectively. Mixtures of VOS with the optimized ratio of mixture of 1:3:1 had the polyphenol content of 319.6mg catechin/g; their ability of free radical scavenging was 72.3% (at 0.12mg/ml); the inhibition of alpha-glucosidase was 70.5% (at 0.4mg/ml). VOS mixture could be considered as promising material for functional foods for the prevention and treatment of diabetes.
