Mặc dù có khuyến nghị rõ ràng về lượng rau quả tiêu thụ để có lợi cho sức khoẻ, mức rau quả tiêu thụ ở các nước trên thế giới vẫn ở mức thấp, đặc biệt là với các nước thu nhập thấp và trung bình. Nhiều nghiên cứu có giá trị đã cho thấy, các yếu tố kinh tế cá nhân là một trong các rào cản chính ảnh hưởng đến tiêu thụ rau quả, đặc biệt là khả năng chi trả với người dân ở nhóm thu nhập thấp. Ngoài ra, giới và trình độ học vấn có ảnh hưởng khác nhau tới hành vi tiêu thụ rau quả. Bài báo này sử dụng phương pháp đánh giá tài liệu nhằm tổng hợp, phân tích những thông tin khoa học một số yếu tố ảnh hưởng đến tiêu thụ rau quả của người dân tại một số nước trên thế giới và tại Việt Nam nhằm cung cấp thông tin là cơ sở xây dựng các hoạt động, chương trình can thiệp và chính sách hỗ trợ nhằm giảm thiểu các rào cản, tăng cường tiêu thụ rau quả trên nhóm dân số mục tiêu.

Although clear recommendations exist regarding the consumption of fruits and vegetables for health benefits, consumption levels in countries around the world remain low, particularly in low- and middle-income countries. Numerous valuable studies have shown that personal economic factors are among the main barriers affecting fruit and vegetable consumption, especially affordability for individuals in low-income groups. Additionally, age, gender, and educational level have varying impacts on fruit and vegetable consumption behaviors. This paper employs a literature review method to synthesize and analyze scientific information regarding the factors influencing fruit and vegetable consumption in various countries, including Vietnam. The information obtained will serve as a reference for developing activities, intervention programs, and support policies to reduce barriers and increase fruit and vegetable consumption among the target population.
