Xenlulaza, hemixenlulaza và pectinaza là các enzyme thủy phân, tạo điều kiện thuận lợi để phá hủy thành tế bào thực vật, qua đó làm tăng hiệu suất của quá trình trích ly. Trong nghiên cứu này, 3 chế phẩm enzyme bao gồm Cellulas, Viscozyme L và Pectinex Ultra SP-L đã được sử dụng để hỗ trợ quá trình trích ly các loại đường STG từ cỏ ngọt Việt Nam Stevia rebaudiana 577. Kết quả cho thấy enzyme Pectinex Ultra SP-L là thích hợp nhất để hỗ trợ quá trình trích ly STG từ có ngọt khi hoạt động dưới các điều kiện công nghệ tối ưu là tỷ lệ enzyme/cơ chất từ 0,14 – 0,19%, nhiệt độ trích ly từ 47 – 540C và thời gian trích ly từ 130 – 150 phút, cho hiệu suất trích ly STG lớn nhất 87,9 – 88%.

Cellulase, hemicellulase and pectinase hydrolyze enzymes create favorable conditions for the destruction of plant cell walls, thereby increasing the Steviol Glycoside extraction yielded from stevia leaf material. In this study, 3 enzyme preparations such as Cellulas, Viscozyme L and Pectinex Ultra SP-L have been added to the extraction of Steviol Glycoside from Vietnamese Stevia rebaudiana S77. The results showed that the Pectinex Ultra SP-L was the most appropriate to assist the STG extraction from stevia at the optimal technological conditions such as the rate of enzyme/ substrate: 0.14 -0.19%, extraction temperature: 47 - 54°C, the extraction time: 130 150 minutes, resulting the Steviol Glycoside extraction yield of 87.9-88.0%.
