A cross-sectional survey conducted in mothers of children under 36 months old from the ethnic minority groups, which are Ede (in Dak Lak), Gia Lai and Ba Na (in Gia Lai), M’Nong (in Dak Nong), Xo Dang (in Kon Tum) and Co Ho (in Lam Dong).
Among the variety of fruits and vegetables in Vietnam, Momordica Cochinchinesnsis Spreng (Gac fruit) is the most popular fruit and has precious nutrition values. Red pulp seed membrane contains high content of carotenoids, Vitamin E and unsaturated fatty acids, especially lycopene content is 59.4mg/100g fresh weight, which is higher than other fruits. Lycopene has the highest antioxidant activity among all the carotenoids.

The clinical trial was conducted in adults, who are overweight/obese. It is evident that the weight reducing milk is safe, convenient and has no side effects. After 6 weeks of trial, the product had the efficacy of reducing weight, which is 5.9% of average body weight (3.9kg).
The study was carried out in over six months on 450 children from 7-8 years old in three primary schools in Yen Phong District, Bac Ninh Province. The selected children were divided into three groups: group 1 was given milk enriched with multi -micronutrients, group 2 - standard milk, and group 3 was the control group.

Serum vitamin A (VA) concentration of children under 5y, milk –VA levels, and some related – risk factors were assessed by using WHOs’ reference, to determine the sub – clinical VA deficiency in 4 ecologicals areas in Vietnam, in order to carry out the methods oriented to liquid the VA deficiency during the next years.
A randomized community controlled trial was carried out in 3 communes of Thua Thien Hue province to assess the impact of early supplementation of high dose of VA on ponderal and linear growth of infants from birth to 6 months of age and the safety of VA supplementation.
This study showed that PDP (chitosan) can be used as food additive in some of Vietnamese traditional food products such as pork luncheon & rice crepe. Perceptible test: Food products with PDP additive look like as those with borax (p>0,05) and are different from ones without food additive (p<0.05).
